ENGLISH CHRISTMAS PUDDING

Ingredients:

  • 1lb / 450g Currents

  • 10oz / 280g Raisins

  • 8oz / 225g Sultanas

  • 2oz / 55g Mixed Peel

  • 2oz / 55g Chopped Cherries

  • 4oz / 110g Flour

  • 2oz / 55g Dark Sugar

  • 4oz / 110g Bread Crumbs 

  • 6oz / 170g Shredded Suet (Atora)

  • 1 Apple chopped small

  • 3 Eggs

  • ¼ pint / 4fl oz Dark Ale

  • 1tbsp Brandy

  • 1tsp Cinnamon

  • 1tsp Nutmeg

  • Pinch of Salt

Note: Makes 2 Christmas Puddings!

To be made before Christmas​

  1. Mix all ingredients together well.

  2. Grease 2x 2pint basins.

  3. Add ingredients equally between both.

  4. Cut a circle of grease proof paper on top of the bowl

  5. Then cover that with foil.

  6. Put basin in a saucepan and add a small amount (1 inch) of water

  7. Bring to the boil and steam / simmer of 4 hours.  

  8. Keep adding more water as needed.

  9. Store in a cool place when done for uptown 6 months.

On the day of eating (Christmas Day)

  1. Steam as before for another 3 hours.

  2. For extra English tradition pour some Brady over the pudding and light it before you...

  3. Serve with cream or English custard.
